Snow Day! (and stuffed French Toast!)

The shelves of the grocery store…the Wawa…the 7-11.. all are completely bare. Winter has come to Philadelphia, and the threat of snow has been uttered. May God have mercy on our collective ice-covered soul.

You see, Pennsylvania doesn’t really encounter “weather” per say. The rare hurricane or blizzard, a misplaced earthquake or tornado. So on the rare visit from something out of the ordinary, my whole area goes (in a word or two) bat shit crazy. All milk and bread disappeared from the shelves – they could’ve marked things up several hundred percent, and we still would’ve bought it. Its primal, really. Must. Have. Bread. And. Milk.
Let’s not consider the more important things that I left at the store. Like salt for the steps… or an a snow brush to replace the one that Shelby ate in the off season…

The running joke? What are you going to make with that? French toast?

Well, when its that cold – yes, yes we are!

Spread 4 slices of bread (cinnamon raisin being my personal favorite!) on one side with cream cheese. Spread remaining 4 slices on one side with jam (strawberry rhubarb, another personal favorite!) or some honey . Press cream cheese slices together with jam slices, forming sandwiches.

In a medium, shallow bowl, beat together the eggs, milk and almond extract. Melt butter in a large, heavy skillet over medium high heat. Dip sandwiches in the egg mixture to coat. Place in the skillet, and cook on both sides until golden brown.
